As such, some of the starch has been converted to sugar and the higher temperature kilning produces a darker malt with very strong, sweet, “malty” aroma and flavour. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAlthough these malts have lower diastatic power due to some of the enzymes being denatured, the majority are preserved, allowing them to be used at relatively high percentages within the grist and still get full saccharification.
